Cooking Style: We try to impart a style that is in tune with our surroundings, taking the mountainous setting, climate, and rich history of the ranch into account when designing the menus. In keeping with this ideal, we try to source out as much local product from the area whether it be natural beef from high moutain meadows, honey collected from bees down in the valley, or heirloom potatoes from the rich volcanic soil. When handling these products in the kitchen, we take a "less is more" approach, looking for what can be taken away, rather than what could be added. Each dish is built around no more than three flavor principles in order to better present the pure, simple flavors of each ingredient. Rather than being "inventors" of food, we focus on the method and perfect execution of cooking and its relationship to each dish. All this is done while always keep the guest's experience the top priority of each team member throughout the dining room.

Chef Wes Hamilton, a native of Florida, attended the University of South Florida with the intent to study medicine. It was after a job dishwashing over Christmas break, he left school to pursue his true calling of life in the kitchen. After a year in one of Tampa's top resorts, he applied and was accepted into The Cloister Resorts Chef's Apprenticeship Program in Sea Island, Ga. Three years later, under the watchful eye of his mentor Chef Franz Buck, Chef Hamilton graduated and began to hone his skills in resorts around the country. Having now worked in Florida, Vermont, Georgia, and Oregon, Chef Hamilton and his family settled down in the resort town of Jackson, Wy. It was while here, he accomplished what he considers to be one of his greatest professional achievements in winning the 2000 "Best Young Chef" National Championships in California. Chef Hamilton was most recently Chef at two of Jackson's premier properties; Jenny Lake Lodge in Grand Teton National Park and The Westbank Grill at the Four Seasons Resort, Jackson Hole. Chef Hamilton has now brought his loving family, along with his immense respect for "the guest experience" to the 4UR Ranch to complete the team of this world class property.
