Dinner on the Ranch is the event of the evening. With a menu that changes every night, the ranch strive to have the food rival the veiw from the dinning room, no easy task. With a selection of fresh fish and game every night along with our core menu of Smoked Tenderloin of Beef, Pan-Roasted Chicken with root vegetables, or our Vegetarian Pasta. Every night is a 3-course affair with a selection of starter, entree, and dessert. Having spent our winter sourcing out the very best local products, we are able to provide Local Natural Beef, honey, heirloom potatoes, organic fair trade coffee, as well as vegetables from organic and natural growers.

Chilled Watermelon Salad with field greens, goat cheese, E.V.O. fleur de Sel. Tasting of Summer Tomatoes, fried green tomato, pear tomato-basil salad, yellow tomato sorbet. MEAT Our Signature Dish: House Smoked Beef Tenderloin with potato-parsnip puree, haricots verts, aned Madeira glace. Grilled Rack of Colorado Lamb with goat cheese polenta, wilted greens, lemon-rosemary jus. Grilled Breast of Duck with duck confit ravioli, caramelized cauliflower and asparagus ragout. Ancho rubbed Buffalo Flank with black bean tostada, fresh cilanto. Spice Rubbed Cervena Venison with sweet potato-pablano hash and dried cherries.

VEGETARIAN Along with our Pasta selection, we also develop weekly menus for any of our guests with special diets. Upon their arrival, I will usually meet with the guest to provide a personal menu based on their current eating habits in order provide the best possible experience with they are in my care.
DESSERTS Each night we offer two desserts that change daily. One being designed to showcase our environment, past favorites, or local products such as a Trio of Herbed Creme Brulees, a Tasting of Local Honeys, or the now famous Warm Chocolate Gateaux with Creme Fraiche Ice Cream. The other dessert is designed to bring our guests back to their childhood, which many spent here on the ranch in the summers. With offerings such as the "PB&J", a genoise cake filled with peanut butter mousse and fresh strawberry confiture served with a shot of Natural Root Beer Float with our house made ice cream, or The 4UR S'more with graham tuile, house-made marshmellow, and milk chocolate ganache. Along with such offerings, we also serve a seleciton of ice creams and housemade sorbets.

We provide or guest with a full bar which is available all day on the honor system and staffed with a trained bartender
Lunch for our guest is a mix of time in the dining room and at other locals around the ranch. For our days in the dining room, dining options can be as light as a soup and salad from our Soup and Salad Bar, a classic B.L.T., or a Grilled Chcken Ceasar Wrap. For our hearty appetites, guests can choose from selections such as The 4UR Burger with Black Diamond Cheddar, Penne Pasta with Sautéed Tiger Prawns, or any one of our Lunch Specials ranging from Grilled Ahi tuna with Avacado aioli, Smoked Prime Rib Sandwich with Horseradish cream on toasted baguette, or Apple and Endive Salad with Duck Confit. When outside the dining room, our guests enjoy a large poolside Mexican Buffet complete with icy Margaritas. On Friday guests eat streamside at Station 15 for a fish fry "get together".
4UR Ranch provides a nice Continental Breakfast for our guest who prefer to hit the stream early. This breakfast features smoked salmon and bagels, fresh fruit, a selection of fresh juices, and a selection of morning pastries. Following the continental, we serve a full service Breakfast with all the favorites including Cinnamon Roll French Toast, Malted Waffle with fresh berry compote, Eggs your way with heirloom ranch potatoes, smoked bacon and griddled sausage. Along with the menu, we also feature daily specials including Smoked Beef Hash with Tabasco Hollindaise and Organic Spinach and Local Goat Cheese Omelet. On Tuesday mornings, we venture up Peirce Creek to dine "al fresca" in a high mountain meadow on scrambled eggs, caramelized apples, griddled sausage, heirloom ranch potatoes, and a variety of other items, along with a cup of cowboy coffee cooked over an open fire.
Our entire wine list is based soley around our dinner menu, each having been tasted with specific items in mind. Each menu item is paired with its appropriate wine in order to provide the guest with the perfect match of food and wine. We also have a few of those "special occasion" wines for those special events that are so often celebrated here on the ranch.
